Ingredients
- Colorful Sweet Bell Peppers – You can use whatever color you have on hand green bell peppers, yellow bell peppers, orange bell peppers, or red bell peppers. Once you have the pepper you will slice them into 1/4 inch rings and remove the seeds and center of each pepper.
- Eggs – You really can make as many or as little of these as you wish. I find the average pepper usually cuts into about 4 good sized rings so at least 4 eggs is a good amount. You can also make these egg rings with just egg whites, just cook until the egg whites are set.
- Cooking Spray or Olive Oil – Just a little of your favorite cooking oil so that the peppers and eggs don’t stick is great.
- Kosher Salt – I prefer cooking with kosher salt but for flavoring these eggs you can also use sea salt.
- Ground Black Pepper – Season with freshly ground black pepper after cooking.
- Optional: fresh herbs like parsley or basil for garnish

Instructions
Heat a nonstick skillet over medium heat and lightly grease it with cooking spray or olive oil.
Place bell pepper rings in the skillet, you can fit 3 to 4 depending on size.
Crack an egg into each bell pepper ring. It’s okay if some of the egg leaks out.
Add 1 to 2 tablespoons of water to the skillet and cover. Cook for 2 to 4 minutes, allowing the steam to help cook the eggs.
Remove the cover and continue to cook until the eggs and egg yolk are set to your desired doneness.
Transfer the bell pepper eggs to a plate, season eggs with kosher salt and ground black pepper, and optionally garnish with fresh herbs.

Experiment with Flavors: Try adding different spices, such as paprika or cumin, or a sprinkle of cheese for added flavor. I like to melt a little cheese on top of mine pepper jack, cheddar, or feta cheese are my favorites to use.
