Brussel Sprouts with Bacon and Raisins

If you had told me a year ago that my husband would be requesting brussel sprouts for dinner I would have laughed in your face, like a big hearty laugh that would have turned very awkward very quickly… Well in your face awkward laughing Lauren because my husband now asks for brussel sprouts at least once a week since I started making these bad boys.

These brussel sprouts are made obviously tastier by the use of bacon, sweeter with the help of our friend the raisin, and by frying them on the skillet we give them a nice brown crunch to add to the delicious flavor. I think that a lot of brussel sprout recipes either do too much or too little to help the flavor of the sprouts come through so I wanted to keep it simple with only a few ingredients but I didn’t want plain brussel sprouts either. So with only 3 ingredients and 20 minutes you have yourself the perfect side everyone will love (yes everyone will actually love brussel sprouts).

Brussel Sprouts with Bacon and Raisins

Ingredients
  • 4 cups brussel sprouts (about 8 large sprouts in a cup)
  • 2 strips of bacon
  • 1/4 cup raisins
  • 1-2 teaspoons olive oil if needed
  • salt and pepper to taste
Instructions
  1. Cut bacon into 1/2 inch pieces.
  2. Add bacon to cold skillet, put on medium heat. Cook bacon 5-7 minutes tossing every couple minutes until desired crispiness.
  3. While bacon is cooking, clean, trim, and half your brussel sprouts.
  4. Remove bacon from skillet and place on a paper towel lined plate, set aside.
  5. Drain all but approximately 2 teaspoons of bacon grease from your pan, you will want a shallow layer of grease to cover your skillet, when in doubt take more then you think out and you can always add more (or olive oil) back in.
  6. Add brussel sprouts to skillet and toss over medium heat, try to spread out the sprouts as much as possible so that they can get crispy and then let the brussel sprouts cook. Do not toss for the next couple minutes so they can get the crispy brown parts on them.
  7. After about 4 minutes give the sprouts a toss, they should be starting to look brown and crispy. If they appear to be burning or seem to not have enough grease to cook in add 1-2 teaspoons of olive oil (or more bacon grease, i prefer adding olive oil if needed to lighten it up). Toss in extra oil if added and continue to cook for 3 minutes.
  8. After 3 minutes toss brussel sprouts again.
  9. After 3 minutes turn down to low heat. Add bacon and raisins to the skillet. Toss together. Continue to cook for 2 minutes stirring occasionally until raisins are heated.
  10. Serve immediately.
