I am so excited to share these with you! Nothing is better than an excuse to eat cookies at breakfast or as a snack, and these are the perfect excuse.

- Banana – The more brown or black the better, just like when making banana bread!
- Peanut Butter – Use natural 100% peanut butter, it is so easy to make at home!
- Maple Syrup – For the sweetener, make sure you use real maple syrup.
- Flaxseed Meal – To make a flax seed egg, below the ingredient list I go into what a flax seed egg is in more detail.
- Salt – Kosher or sea salt work best, if you are using table salt, half the amount.
- Old Fashioned Oats – I haven’t tested using quick oats but you might be able to substitute them if you are in a pinch, but you cannot use steel cut oats for this recipe.
- Fillings:
- Raisins
- Pumpkin Seeds, Sunflower Seeds, or other seeds
- Coconut Flakes
- Hemp Hearts
- Chocolate Chips
- Chopped Pecans, Walnuts, Peanuts, or other nuts
- Dried Cranberries
- Freeze Dried Fruits
- Chopped Dates

What is a flax seed egg?
A flax seed egg is a vegan and plant-based substitute for a traditional chicken egg in cooking and baking. It is made by combining ground flax seeds with water and letting the mixture sit for a few minutes until it forms a gel-like consistency similar to a raw egg. This natural binding agent works wonders in recipes that call for eggs, especially in baking.
Flax seed eggs are an excellent alternative for those who follow a vegan or egg-free diet due to allergies. They not only provide the binding effect needed in recipes but also offer a nutritional boost, being rich in omega-3 fatty acids, fiber, and essential nutrients.

The more overripe the banana is the better this recipe will work, a brown or black banana will work best!

In a small bowl add 1 tablespoon of flaxseed meal and 3 tablespoons of cold water. Stir and let sit 5 minutes.
Preheat the oven to 325º F and line a sheet tray with parchment paper.
In a large bowl add the banana and smash with the back of a fork.
Add the peanut butter, maple syrup, flaxseed mixture, and salt to the bowl. Mix to combine.
Add the oats to the mixture and mix until combined.
Add in the fillings, and mix to combine.
Use a 1/4 cup measuring cup and measure out the better. Transfer the batter to the parchment paper line sheet pan. Shape into the batter on the parchment paper into cookie shapes. The shape of these cookies won’t change at all while baking.
Transfer to the oven and bake for 15 minutes. Let the cookies cool on the sheet pan. Once cooled store in an airtight container.

Do I have to use a flaxseed egg or will a regular egg work?
If you don’t want to use a flaxseed an a regular egg will work just fine.
