How to Make Carrot Top Pesto

Carrot Top Pesto is great way to reduce food waste and make use of an often-overlooked part of the vegetable. Plus, it’s easy to make and can be used in a variety of ways.

Ingredients:

fresh carrot top greens baby spinach garlic raw walnuts kosher salt extra virgin olive oil

Making sure the greens are washed add everything but the olive oil to a food processor. Process on pulse several times until well mixed.

Slowly drizzle in the olive oil while the food processor is running until pesto forms. Add more oil if needed.
