How to Make Chicken Enchilada Casserole

This Cheesy Chicken Enchilada Casserole is served up in layers of enchilada filling, corn tortillas, and cheese making a great family friendly dinner!

Ingredients:

For the Casserole: cooked shredded chicken salt diced green chiles black beans frozen corn kernels corn tortillas shredded Mexican cheese blend For the Homemade Enchilada Sauce: olive oil small yellow onion salt cumin chili powder all purpose flour tomato sauce chicken stock garlic

Start by making the delicious homemade enchilada sauce. Don't have time? No worries you can use store bought sauce instead!

Make the filling with shredded chicken, diced green chilies, black beans, corn, and enchilada sauce. 

Layer enchilada sauce, corn tortillas, filling, and cheese. Repeat. Transfer to the oven and bake until bubbly and cheese is melty.

Serve with sour cream, cilantro, or your other favorite garnishes.  (P.S. This meal is freezer friendly)
