Watermelon Aperol Spritz Cocktail
Not that there is anything wrong with a classic aperol spritz but I really wanted to make an even more summer-y and fruity version, and adding juicy watermelon is definitely the way to go. I wasn’t fully sure what to expect when I first had the idea to add the watermelon juice into the spritz but I will tell you that it turned out even better than I imagined…
This cocktail is like if a classic aperol spritz and a watermelon jolly rancher had a baby, but like in the best way possible. Perfect for warm weather this watermelon spritz is the next level of refreshing cocktails. The best part is that it is only 3 simple ingredients. To make this drink we are essentially taking out the soda water but adding watermelon juice instead, easy peasy!
Ingredients
- Watermelon Juice – This can be freshly made or store bought. Below are quick instructions on how to make it at home if you don’t want to buy cold pressed watermelon juice from the store.
- Aperol – The classic Italian Bitter Apéritif.
- Prosecco – Made in Italy Prosecco is a sweet sparkling wine.
- Watermelon Slice – For a garnish, you could also go with the traditional garnish of an orange slice if you don’t have any fresh watermelon.
Making Watermelon Juice
If you aren’t buying watermelon juice, making fresh watermelon juice is super simple. You will want to cut up about 2 cups of watermelon, making sure to remove the outside. Add the diced watermelon to a blender and blend watermelon. Once the watermelon is nice and blended strain the contents of the blender through a cheese cloth lined fine mesh strainer. Depending on how many drinks you plan on making you might want to use more watermelon.
If you aren’t using the watermelon juice right away add it to an airtight jar and store in the refrigerator until you are ready to use.
Instructions
Fill a wine glass with ice (a white wine glass works best). Add the watermelon juice and Aperol overtop the ice.
Slowly add the Prosecco overtop, leaving enough room in the glass for a watermelon wedge. Add a watermelon garnish and enjoy!

Does Aperol go with watermelon?
Yes! The sweetness of the watermelon goes well with the bitterness of the Aperol.
Can I use store bought watermelon juice?
Absolutely! I used store bought watermelon juice when testing this recipe. Just look for any cold stored fresh pressed watermelon juice. Most of these juices might be mixed with a little water and/or lemon juice but it still works great!

Make these homemade watermelon ice cubes instead of using plain ice.
Can I add club soda for more fizz?
Of course! While I found that the Prosecco provided enough bubbles for me feel free to add some soda water to give it even more frizz.
