Equipment Needed
Gather the following essentials:
- Sheet pan
- Parchment paper
- Ruler & Pencil
- Mixing bowls
- Whisk
- Rubber spatula
- Serrated knife
- Cutting board
Ingredients
- Dried Cranberries – Often called Crasins
- Eggs
- Sugar
- Unsalted Butter – Melted
- Orange Liqueur – I suggest using Cointreau, I personally think it has the best flavor of all the orange liquors but you can also use Triple Sec, or Grand Marnier.
- Orange Zest – From 1 large navel orange
- Vanilla Extract
- Flour
- Baking Powder
- Kosher Salt

Instructions
Preparation
Preheat and Soak: Start by preheating your oven to 325°F. On a sheet pan, draw 2 rectangles on parchment paper so you know the shape and size of the dough. In a bowl, soak the dried cranberries in boiling water for 5 minutes, then drain.
Wet Ingredients
Whisk and Mix: In a large bowl, whisk the eggs and add sugar, orange liqueur, orange zest, vanilla extract, and melted butter. Mix these ingredients until well combined.
Dry Ingredients
Combine Dry Ingredients: In a separate bowl, combine the flour, baking powder, and salt. Make sure the dry ingredients are well mixed.
Combine and Add Cranberries
Bring it Together: Add the dry ingredients to the wet mixture, using a rubber spatula to fold until just combined. Fold in the drained cranberries.
Shape the Dough
Divide and Press: Divide the batter in half and transfer each half onto the rectangles on parchment paper. With floured hands, press the dough into flat rectangle shapes.
Baking
Golden Brown Bake: Pop it in the oven and bake for 25 minutes until golden brown and cracking on top. Let it rest for 30 minutes before the next step.
Cutting and Second Bake
Slicing and Re-Baking: Using a serrated knife, cut into 1/2 to 1-inch pieces. Place them back on the sheet pan with one cut side up and the other down. Bake for another 15 minutes.
Final Bake
Perfectly Browned Finish: Flip the biscotti and bake for an additional 15 minutes until slightly browned. Allow the biscotti to cool completely before serving.

Yes, you can use orange extract or orange juice as a substitute for orange liquor, just note the flavor will change slightly if you use something else.
How do I know when the biscotti is done baking?
Look for a golden brown color and cracking on the top after the initial 25-minute bake. For the second bake you will want it light brown.
Can I use fresh cranberries instead of dried ones?
Yes, fresh cranberries can be used but note it will change the texture of the biscotti. If you are wanting to use fresh cranberries in your baking try making a loaf of glazed orange cranberry bread.
Can I freeze the biscotti?
Yes, these biscotti freeze well. Store them in an airtight container for up to a month.

Elevate your baking game with these Orange Cranberry Biscotti! Perfectly balanced between tart cranberries and zesty orange, these homemade treats are a holiday essential.
Ingredients
- 2/3 cup cranberries
- 2 eggs
- 1 cup sugar
- 4 tablespoons unsalted butter, melted
- 2 teaspoons orange liqueur (Cointreau)
- orange zest from 1 large orange
- 1/2 teaspoon vanilla extract
- 2 cups flour
- 2 teaspoons baking powder
- 1/4 teaspoons kosher salt
Instructions
- Preheat oven to 325° F. On a piece of parchment paper the size of a sheet pan draw 2 8x3 rectangles with at least 3 inches between them. Place the drawn on side down on a sheet pan.
- Bring water to a boil. Add the cranberries to a bowl and cover with boiling water and let rest for 5 minutes. Drain and pat any excess liquid off.
- In a large bowl whisk the eggs together. Add the sugar and whisk well. Now add the orange liqueur, orange zest, vanilla extract, and butter. Whisk to combine.
- In a different bowl combine the flour, baking powder, and salt. Mix to combine.
- Add the dry ingredients to the wet ingredients combine with a rubber spatula until just mixed and no more flour streaks appear. Add the cranberries and fold in.
- Use the spatula to divide the batter into two halves. Transfer each half to one of the rectangles on the parchment paper. Using well floured hands (dough is sticky) press dough into a flat rectangle shape.
- Transfer the sheet pan to the oven and bake for 25 minutes until it is golden brown and starting to crack on the top. Remove from the oven.
- Let the biscotti rest for 30 minutes before transferring to a cutting board. Using a serrated knife cut into 1/2 inch to 1 inch pieces. Transfer back to the sheet pan with one of the cut sides faced up and the other faced down.
- Bake another 15 minutes. Flip the biscotti and bake a remaining 15 minutes until the biscotti has browned slightly. Let the biscotti cool completely before serving.
