How to Make Tortellini Skewers
Right now it is currently ‘party season’, that is what I like to refer to as the weeks in-between Thanksgiving and Christmas. I find we usually have a get together every weekend during that time and you can never have too many sharable finger foods up your sleeve to make and bring to said parties.
But these tortellini appetizers aren’t just limited to the holiday season, they are equally as perfect for summer barbecues, birthday parties, fall festivities, or spring holidays. They seriously are an all season type of food.
With that in mind I tried to keep it as easy as possible, grabbing easy items from the store to keep it simple!
This recipe is inspired by both easy pasta salads and antipasto dishes. A little combo of those two then put on a skewer it is pretty much perfection.
After collecting your items you will prepare the tortellini and then drizzle everything in Italian Dressing to let it marinate! Doing this not only helps bring extra flavor to the skewers but it also prevents everything, specifically the tortellini from drying out.
And I haven’t even gotten to the best part which is these are best made ahead of time so all you have to do once it is party time is grab them out of the fridge and get them on a platter!
Ingredients
- Package Tortellini – Cheese or really whatever is your favorite variety!
- Cherry Tomatoes – Sometimes called salad tomatoes as well
- Salami – Here you can pick your favorite varieties as well, I like just plain Italian Salami because it keeps it more inclusive for those who don’t care for too much spice, aka keeps it kid friendly.
- Italian Dressing – Choose your favorite variety here, you can keep it classic, zesty, healthy, heck if you wanted to make your own dressing that is totally cool.
- Pearl or Cherry sized Fresh Mozzarella – As of late the groceries near my house have been inconsistent with the cheese selections, not that really has to do with you making the recipe but you can use either the smaller pearl size or the next size up cherry size fresh mozzarella here. In a pinch you could grab any type of mozzarella and cube it yourself as well.

Instructions
Prepare tortellini to package instructions. Usually this will be about a 3 minutes boil.
Drain the tortellini in a colander and rinse it with cold water to cool it down. Then transfer the tortellini to a large Tupperware container. Add in ½ cup Italian dressing and toss.
If the there is room remaining for everything else in the container add the cherry tomatoes, salami, and cheese. If there is not room add it to a separate container. Drizzle with remaining Italian dressing.
Cover the container(s), transfer to the refrigerator and let rest for at least an hour or up to overnight.
To make the skewers add one tortellini, tomato, folded salami, and mozzarella cheese(s) to a skewer. Repeat until you run out of an item. Return to the container and refrigerate until it is time to serve or serve immediately.
Tips, Tricks, & Questions
Feel free when an item runs out to keep making skewers with the other ingredients! I found usually the cheese or salami run out first.

- 10 ounce package cheese tortellini
- 10 ounces cherry tomatoes
- 5 ounces salami
- 1 cup Italian dressing
- 8 ounces pearl or cherry sized fresh mozzarella
Instructions
- Prepare tortellini to package instructions.
- Drain tortellini, rinse with cold water, and transfer to a large Tupperware container. Add in ½ cup Italian dressing and toss.
- If the there is room in the container add the cherry tomatoes, salami, and cheese. If not add to a separate container. Drizzle with remaining Italian dressing. Cover, place in the refrigerator, and let sit for at least an hour or up to overnight.

Make this recipe your own by choosing your favorite flavors, for example use a different flavored tortellini like pesto. Or choose a spicier salami!
