Crispy Baked Zucchini Fries Recipe
When it is the middle of summer and zucchini is everywhere this is a great recipe to make! With a tender inside and crispy outside these are the ultimate side dish. But really there are plenty of reasons to give this baked zucchini fries recipe a try!

Ingredients
- Zucchini – You will want medium sized zucchini.
- Flour – I use all purpose flour but because no gluten is needed for this recipe you can use any kind of flour feel free to substitute for almond flour, chickpea flour, or whatever works best for you.
- Dried Parsley & Dried Oregano – Just to add a little flavor you could also add garlic powder, onion powder, or black pepper. Or just use some Italian Seasoning!
- Kosher Salt – Of course a little salt to help season the zucchini too.
- Eggs – You will need two.
- Breadcrumbs – You can used plain or seasoned. I happen to prefer regular breadcrumbs for this particular dish ,you can also use panko breadcrumbs for this recipe too.
- Spray Cooking Oil – I use and recommend using an olive oil spray but whatever cooking spray works best for you.
- Dipping Sauce – My family prefers marinara but use your favorite dipping sauce!

Instructions
Preheat your oven to 425º F. Spray a sheet pan with cooking oil to prevent sticking.
Prepare the zucchini by trimming off the ends. Cut each zucchini in half, then cut each piece in half again lengthwise. Finally, cut the zucchini into fry-shaped pieces, ensuring they are roughly the same size for even cooking.

Set up your breading station with three bowls. In the first bowl, mix together the flour, dried parsley, dried oregano, and kosher salt. In the second bowl, crack and whisk the eggs until well combined. In the third bowl, add the breadcrumbs.

Bread the zucchini by coating each piece first in the flour mixture, then in the beaten eggs, and finally in the breadcrumbs. Ensure each piece is fully coated at each step. Place the breaded zucchini on the prepared sheet pan in a single layer.
Spray the breaded zucchini with a light layer of cooking oil to help them crisp up in the oven.

Bake for 20 minutes, flipping the zucchini fries halfway through to ensure they cook evenly and become golden brown.

Serve immediately with your favorite dipping sauce, such as marinara. Enjoy!

The breading process works best if you have a ‘dry ingredient’ hand and a ‘wet ingredient’ hand. For example I only use my right hand to handle the flour and breadcrumbs while I only use my left hand to touch the wet zucchini and the eggs. By doing this it keeps your fingers from getting breaded.

Instructions
- Preheat oven to 425º F. Spray a sheet pan with cooking oil.
- Prepare the zucchini by trimming off the ends. Cut the zucchinis in half to create four pieces. Then cut each of the pieces in half again the other way. Then cutting the zucchini into fry shaped pieces not too skinny, try to keep the fries about the same size so they will cook more evenly.
- Using three different clean bowls add the flour, parsley, oregano, and kosher salt to the first bowl. Mix the flour together with the seasonings.
- In the second bowl crack in the two eggs and whisk until well combined.
- In the third bowl add the breadcrumbs.
- One at a time add a piece of zucchini to the flour fully coating it, then dunk it in the eggs fully coating it, and lastly in the breadcrumbs fully coating it. Transfer the breaded to zucchini to the sheet pan and repeat with the remaining zucchini.
- Once all the breaded zucchini is on the sheet pan spray with more cooking oil. Transfer the tray to the oven and bake 20 minutes, at the halfway mark take the sheet pan out and flip over all of the zucchini fries. Cook until the fries are golden brown. Best served with marinara sauce, enjoy!
Notes
For step 6 please note that this process works best if you have a 'dry ingredient' hand and a 'wet ingredient' hand. For example I only use my right hand to handle the flour and breadcrumbs while I only use my left hand to touch the zucchini and the eggs. By doing this it keeps your fingers from getting breaded like the zucchini.
