Skillet Gnocchi with Sausage and Peppers
I like to think of this recipe as a The Schmidty Wife classic, its got lovable ingredients like sausage and gnocchi but I also pack it with vegetables making is a great one-pan meal the whole family will absolutely adore.
Similar to my Sheet Pan Gnocchi, this recipe is filled with simple ingredients to make a great dinner for the family. Filled with fluffy gnocchi (which is a kid favorite), Italian sausage (which you can get sweet or spicy), and of course veggies (this has red bell pepper, yellow bell pepper, onion, mushrooms, and tomatoes) I think you will soon find this one on your menu rotation.
Ingredients
- Italian Sausage Links – You can use either a sweet sausage or a spicy sausage, whichever your family prefers.
- Olive Oil – For sautéing the vegetables.
- Yellow Onion – I good sweet or yellow onion is perfect in this dish.
- White Mushrooms – I like to chop these up because when I do the kids don’t even know they are in the dish, but if you have someone in your family that really *hates* mushrooms you can leave them out.
- Colorful Bell Peppers – I like to use yellow and red bell peppers but you could also use an orange or green bell pepper if you wish.
- Italian Seasoning – If you don’t have any Italian Seasoning handy hop over to my blog post on Homemade Italian Seasoning.
- Petite Diced Tomatoes – I prefer the smaller petite diced tomatoes, I found regular to be a bit chunky but if all you have is regular diced toamtoes you can use those.
- Gnocchi – I have used store-bought gnocchi in this recipe which I think works fantastic but you can also use fresh gnocchi if you have that available to you.
- Parmesan Cheese – For topping the dish at the end.

Instructions
Prepare Sausage:
Heat a large skillet over medium heat on the stovetop. Add Italian sausage links to the skillet.
Cook the sausages for 3-4 minutes until golden brown on one side, then flip and repeat until all sides are evenly browned. Transfer the sausages to a plate and set aside.
Cook Vegetables:
In the same skillet, add olive oil, diced onion, and chopped mushrooms. Cook for 6 to 7 minutes until onions are tender and mushrooms release their liquids.
Add the thinly sliced bell peppers and Italian seasoning to the skillet. Cook for an additional 3 minutes until peppers are slightly softened.
Combine Ingredients:
Return the sausages to the skillet along with petite diced tomatoes. Stir to combine all ingredients. Cover and cook for 5 minutes to allow flavors to meld.
Incorporate Gnocchi:
Add gnocchi to the skillet, ensuring it’s evenly spread out. Cover and cook for another 5 minutes, or until gnocchi is tender. If needed, continue cooking for an additional 3 to 5 minutes until sausage and gnocchi are fully cooked.
Serve:
Once everything is cooked through, remove the skillet from heat. Serve the gnocchi skillet with a generous topping of grated Parmesan cheese.

Ingredients
- 16 oz Italian sausage links
- 1 tablespoons olive oil
- 1 onion, diced
- 8 oz white mushrooms, roughly chopped
- 2 large colorful bell peppers (red, and orange), thinly sliced
- 2 teaspoons Italian Seasoning
- 1 15-oz can of petite diced tomatoes
- 1 lb gnocchi
- Parmesan cheese for topping
Instructions
- Bring a large skillet to medium heat on the stovetop. Once hot add the sausages. Cook 3-4 minutes until golden and flip. Cook another 3-4 minutes and flip again to another side. Cook another 3-4 minutes and flip to the fourth side and cook another 3-4 minutes. The sausages should be browned on four sides. Transfer to a plate and set aside.
- Add the olive oil to the skillet along with the diced onion and mushrooms. Cook 6 to 7 minutes until the onions have started to become tender and the mushrooms let out some liquids.
- Add the bell peppers and Italian seasoning and cook for 3 minutes.
- Add the petite diced tomatoes and sausages back to the skillet. Stir. Cover and cook for 5 minutes.
- Add the gnocchi and mix in, really make sure the gnocchi gets spread out. Cover and cook another 5 minutes until the gnocchi is cooked. If the sausage or gnocchi needs longer cover and continue to cook another 3 to 5 minutes. Remove from heat. Serve with a generous topping of Parmesan cheese.
