Amazing Lobster Pizza Recipe
Living in coastal New England I love the abundance of lobster. I love it even more when a friend with a lobster connection says I can keep a bunch if I go over and help her clean all the lobsters. That is how this lobster pizza was originally developed, leftover lobster!
While there are a few famous places that serves lobster pizza (like Red Lobster for example which is just unacceptable where I live) this pizza is made to let the lobster shine through and be the star!
With butter and garlic and just enough spinach to even the whole pie out and of course topped with plenty of cheese this is a specialty pizza you soon won’t forget. Perfect for enjoying with a glass of white wine and a simple spinach salad.

Equipment for Making Pizza
Ingredients
- Pizza Dough – You will want about 1 pound or 16 ounces of pizza dough, if you are making your own dough and using my pizza dough recipe you will use half of the risen pizza dough.
- Cooked Lobster Pieces – This works great with leftover lobster but you can also use freshly cooked or frozen lobster as well. If you are using frozen lobster make sure it is all the way thawed and patted dry before using. Also if possible the claw and leg meat work the best for a pizza topping.
- Unsalted Butter – I find that the cheese leaves the pizza salty enough but if all you have is salted butter you can use it, it won’t ruin the pizza.
- Garlic Cloves – Use fresh cloves of garlic and mince it yourself for the best results.
- Baby Spinach – A large handful or a little more if you like spinach.
- Shredded Mozzarella Cheese – I like to shred a block of low-moisture mozzarella for the best results.
- Fresh Parsley – For topping the pizza, the freshness goes a long way.
- Cornmeal – The cornmeal is strictly to place on the pizza peel so that the pizza can slide off onto the pizza stone.

Instructions
Preheat your oven to 475°F and place a pizza stone inside to heat up.
Roll out the pizza dough on a floured surface into a large circle, ensuring it’s thin and even.
Sprinkle cornmeal on a pizza peel and place pizza dough onto it.
In a skillet, melt the butter over medium heat and sauté the minced garlic until fragrant.
Add the baby spinach to the skillet and cook until wilted, about 2-3 minutes.
Spread the spinach-garlic butter mixture evenly over the top of the pizza dough.
Sprinkle the shredded mozzarella cheese over the spinach layer, covering it completely.
Arrange the cooked lobster pieces on top of the cheese, distributing them evenly.
Carefully transfer the pizza onto the preheated pizza stone in the oven.
Bake for 10-13 minutes or until the crust is golden brown and the cheese is bubbly.
Once done, remove the pizza from the oven and let it cool for 1-2 minutes.
Sprinkle freshly chopped parsley over the pizza before serving.

Yes of course you can use frozen lobster, but ensure it is fully thawed and drained before adding it to the pizza.
How do you reheat lobster pizza?
Place as much pizza as you can fit onto a pizza stone. Place the stone with cold pizza into the oven. Bring oven to 350ºF.
Keep and eye on the oven because reheat can differ with the size of the slices and how much you put in but it should only take about 10 minutes!

Lobster Pizza
Adding lobster to your pizza is seriously the best idea. Garlic, butter, cheese, and lobster piled high and cooked into a pizza.
Ingredients
- 1 pizza dough (16 ounces)
- 10 ounces or about 1.5 cup cooked lobster pieces
- 3 tablespoons unsalted butter
- 2-3 garlic cloves, minced
- Large handful of baby spinach
- 1 1/2 cups shredded mozzarella cheese
- Fresh parsley for topping
- 2 tablespoons cornmeal
Instructions
- Add a pizza stone to the oven and preheat the oven to 475° F.
- On a floured surface stretch/roll out the pizza dough into a large circle. If dough starts to get a little sticky sprinkle more flour. If you are just starting out it might be easiest to use a rolling pin to assist you. If you are looking to hand toss the pizza a good trick to start is to make fists with both of your hands, keep both of your hands on the outer edge of the dough and gently pull your fists apart a few inches and then shimmy them over and back together, inching around the dough until a circle takes shape. Another option is on a well floured surface you can also gently use your fingers pulling the dough into place.
- Once crust is formed sprinkle the cornmeal onto the pizza peel. Lay the dough overtop the corn meal on the pizza peel. I like to give the peel a little shake to make sure the pizza isn't sticking and will slide off when the time comes.
- Heat a skillet over medium heat. Add the butter and melt. Once melted add the minced garlic and stir and cook about 30 to 60 seconds until very fragrant. Add the large handful of spinach to the skillet and sauté so the spinach begins to wilt, cook the spinach for 2 to 3 minutes moving around the skillet until it is wilted but still bright green. Remove from the heat.
- Using a rubber spatula transfer the spinach butter mixture to the pizza crust. Spread evenly over the dough.
- Next add the cheese in a single layer covering the spinach and butter. Evenly layer the lobster pieces over the cheese.
- Using the pizza peel carefully transfer the pizza to the pizza stone in the hot oven.
- Cook 10 to 13 minutes until the pizza is golden brown. Carefully remove from the oven and let sit 1 to 2 minutes before slicing. Top with fresh parsley before serving.
