Bean and Cheese Burrito
This is a no fuss fresh bean burrito recipe that mimics those maybe not so good for you bean burritos that are oh so good!
Now don’t get me wrong I love a burrito packed with all sorts of goodies like rice, veggies, avocado, and protiens BUT there is something so simple and comforting to me about a plain refried bean and cheese burrito.
Just think of the melty cheese… and the flavorful yet simple refried beans squished inside the burrito. Okay so maybe a bean burrito is secretly one of my comfort foods? Who knew!
Well luckily this recipe I can feel good about eating opposed to the store or restaurant versions that are full of preservatives and sodium. You can feel even better about this recipe if you use some of my homemade refried beans.

Both versions are similar, the biggest difference is how they are made. I enjoy this recipe because it is vegetarian (most actually aren’t, usually LARD is a common ingredient). I also enjoy making them at home this way because there is no actually ‘frying’ done, they are simple flavorful beans that you can feel good about!
I will note that the recipes for the refried beans makes A LOT, so you could easily get a ton of burritos from it OR you could also use them for two different meals.
(Like also try them in my Slow Cooker Black Bean Tortilla Soup, it is the secret ingredient!)
Of course if making homemade refried beans is out of your comfort zone no worries you can totally grab a can at the grocery store to use instead! What I would look for when searching for a can is one labeled ‘Vegetarian’, if you are in doubt about what type you want to use I recommend just looking at the ingredients list on the back of the can to make sure that it fits your needs!
Also this is a recipe you can definitely put your own twist on! I kept it minimal but you can feel free to add or change some of the flavors! If you have a house full of spice lovers use spicy salsa or add a few pickled jalapeños!
You can also change it up by adding to it. Add a bit of diced pepper or add some extra whole black beans for flavor and texture! Just keep in mind don’t add too much of anything or you won’t be able to roll up the burrito! I would personally just start with about 1/4 cup of something I would want to add and judge from there if it was okay to add more or not!
Lastly I haven’t even mentioned the freezing component to these lovely refried bean burritos yet! They are so easy to freeze individually. Perfect for that busy family or individual who wants something easy to grab from the freezer just in case they are having a crazy day (so like everyone right?!)
Further down I will go over the extra step on how to get this done! Don’t. worry it is pretty simple.
Personally I also ways double the recipe so that I can freeze four for a later date! So let’s get making!
Ingredients
- Refried Beans – homemade or a can refried beans
- Chunky Salsa – This is a good spot o make the burrito yours, use the spiciness level you enjoy the most! You can also use a salsa with a flavor if you see it fit, there is really no wrong answer here! I personally use a mild variety, either Tostito and Pace with my little kids and they gobble these up!
- Onion – I like to use a yellow onion but a white or red onion will also work just as good!
- Taco Seasoning – Homemade of Store Bought work great here, just enough to add flavor but not too much to turn it into a taco. Get my Homemade Taco Seasoning HERE.
- Kosher Salt – Just a little to flavor, you more or less if you made your own refried beans and feel that it needs to be adjusted. AKA just make sure you try a little bite of the filling before using it to see if you think it needs more salt!
- Shredded Cheddar Cheese – If you are looking for big melt I recommend buying a block of cheese and shredding it yourself. The pre-shredded stuff from the store is covered in anti-caking powder making it less likely to melt.
- Flour Tortillas – The 10 inch ones, often referred to as “burrito-sized”.

Instructions
Preheat oven to 375º F. Lightly grease a sheet pan.
In a bowl add the refried beans, salsa, onion, taco seasoning, and salt. Mix until combined.
Spread 1/4 of the mixture evenly over a burrito tortilla leaving an inch from the end empty.
Sprinkle 1/2 cup of the shredded cheese over the top of the bean mixture in each burrito. Wrap up the burrito making sure to tuck in the sides.
Lay seam side down spread out on the sheet pan.
Transfer to the oven and bake 12 to 15 minutes. Let rest at least 3 minutes before eating.
To Freeze:
Once burritos are wrapped and made instead of cooking wrap each individual burrito tightly in cling wrap. Once wrapped in cling wrap, wrap in a layer of aluminum foil. Place burritos in a labeled freezer safe bag.
To Reheat From Frozen:
- Microwave: Fully unwrap the burrito. Place on a microwave safe plate. Dampen a paper towel and wrap over the frozen burrito. Cook 3-4 minutes wrapped in a damp paper towel until fully cooked. Timing will depend on the wattage. Let rest at least 3 to 5 minutes before eating.
- Oven: Preheat the oven to 350º F. Carefully unwrap the burrito, you will be resuing the aluminum foil. Discard the plastic wrap and loosely rewrap the burrito in the foil. Place on a sheet pan and cook 45 minutes. Remove and unwrap the burritos and place them back on the tray. Transfer back to the oven for 10 to 15 more minutes until your preferred crunchiness. Let rest at least 3 minutes before eating.
Tips, Tricks, & Questions
- If you are using store bought refried beans and it comes out really compacted out of the can and you think it will be hard to mix up I recommend placing it in a microwave safe dish and warming it up just slightly (like 1 to 2 minutes) to help get it smooth so it can be mixed up with the other ingredients.
- I just want to note to keep into consideration how hot the burritos might be on the inside when serving! They might feel okay on the outside but be very hot in the inside! When serving to my your kids I will usually cut one in half and have the share, this way I know it gets a chance to cool down!

My friend mentioned that he loves bean and cheese burritos. He has been such a huge help lately that I decided to try to make some which is how I found this recipe. He was thrilled, said they were excellent and perfect seasoning for his taste which means HOT! I used jalapeno canned refried beans and HOT Pace Chunky salsa to get the heat just right for him. He even asked for seconds and told me the recipe is absolutely a keeper. I took the advice to heat the beans first to loosen them up since I was using canned beans and it did make a nice difference in terms of mixing and spreading. In my microwave, 2 minutes heating time for the beans was perfect.
