Easy Chicken Fajitas Recipe
We are always searching for the perfect weeknight meal right? Well look no further, Easy Skillet Chicken Fajitas! Juicy chicken and flavor packed peppers ready to eat in 20 minutes.
This meal is as simple as cutting up your veggies & chicken, seasoning them, and a quick cook on the stovetop (or buying pre-cut veggies and chicken, because so many groceries do that now!).
Once everything is cooked you can enjoy your fajitas piled high in warm tortillas, top with fresh squeezed lime juice, cilantro, avocado, sour cream, or whatever makes your fancy.
This meal is seriously a winner winner chicken dinner!

Ingredients for Chicken Fajitas
Nothing out of the ordinary here, I do recommend you hop over to my post for the homemade seasoning to make these!
- Chicken Breast
- Bell Peppers
- Red Onion
- Fajita Seasoning (click for recipe)
- Cooking Oil (high heat like refined coconut, vegetable, or canola oils)
- Fajita Tortillas

How To Make Chicken Fajitas
Start by cutting the peppers and onion into thin strips. In a large bowl add 1 tablespoon of the fajita seasoning to the peppers and onions, mix to coat. Set aside.
Next cut the chicken into thin strips. In a different large bowl add the remaining 1 tablespoon of fajita seasoning to the chicken, mix to coat. Set aside.
Now heat a large skillet (preferably cast iron) over HIGH heat. Once the skillet is hot add the oil.
Add the peppers and onions to the hot skillet. Cook tossing often 4-6 minutes or until the peppers and onions are slightly charred and starting to soften. Carefully remove the peppers and onions onto a clean plate or bowl (cover the keep warm).
Add the chicken to the hot skillet. Cook the chicken 4-6 minutes, tossing the chicken occasionally. Keep the chicken spread out on the skillet to get a better sear. Since the chicken is in thin strips it shouldn’t take long to cook. So once the sear looks good check for doneness then remove from the heat.
Serve everything immediately while it is still nice and hot!

- 1 lbs chicken breast
- 3 bell peppers (red, yellow, and orange)
- 1 red onion
- 2 tablespoons Fajita Seasoning
- 1 tablespoon cooking oil (coconut)
- 12 fajita sized tortillas
Garnishes

- sour cream/plain greek yogurt
