It really is essentially waffle fry nachos with a single layer of crispy waffle fries topped with all of the best toppings like pork crispy bacon, cheese sauce, and more!

- Frozen Waffle Fries – These are the foundation of the dish, providing a crispy base for the toppings. You can use seasoned waffle fries or even sweet potato waffle fries, whatever sounds best to you.
- Pulled Pork – Use hot, prepared pulled pork—store-bought or homemade. This is absolutely one of the best ways to use up leftover pulled pork. As written I use my Crockpot Pulled Pork that does not have barbecue sauce but you can use sauced pulled pork or not, it is really up to your preference.
- Unsalted Butter – Essential for the creamy cheese sauce.
- Flour – Helps thicken the cheese sauce.
- Milk – Adds creaminess to the sauce.
- Shredded Sharp Cheddar Cheese – Use high-quality cheese for the best flavor. For the best results use a block of cheddar and shred it yourself, this will help the cheese melt into the sauce so much better than if you use the pre-shredded cheese.
- Smoked Paprika – Adds a subtle smoky kick. If you don’t have smoke paprkia feel free to omit or use regular paprika.
- Bacon – Cooked to crispy perfection and chopped.
- Tomato – For a fresh, juicy topping.
- Green Onions – Adds a mild onion flavor and vibrant color.
- Sour Cream – Creamy and tangy, perfect for dolloping or drizzling.

Instructions to Make Pulled Pork Waffle Fries
Cook the Waffle Fries
Prepare the waffle fries according to the package directions, typically baking them in the oven at 425°F for about 25 minutes. While they bake, move on to preparing the toppings.
Cook the Bacon
In a skillet, cook the bacon over medium heat, flipping occasionally until it’s crispy. This should take 8 to 10 minutes. Transfer the bacon to a paper towel-lined plate to drain excess grease, then chop into small pieces.
Make the Cheese Sauce
In a small saucepan, melt the butter over medium heat.
Once melted, whisk in the flour and cook for 1 minute to form a roux.
Gradually pour in about ⅓ of the milk, whisking to combine. Once thickened, slowly add the remaining milk, whisking continuously.
Heat the mixture until steaming (but not boiling), about 5 minutes.
Add the shredded sharp cheddar cheese and smoked paprika. Let the cheese sit for 10 to 20 seconds before whisking until smooth. Remove from heat and set aside.
Prep the Fresh Toppings
Dice the tomato and slice the green onions while the cheese sauce rests. Set them aside for assembly.
Assemble the Dish
Transfer the hot waffle fries to a serving platter, clean sheet pan, or clean cutting board.
Evenly distribute the pulled pork over the fries.

Ingredients
- 24oz package frozen waffle fries
- 1 1/2 cups pulled pork, hot
- 1 tablespoon unsalted butter
- 1 tablespoon flour
- 1 cup milk
- 1 cup shredded sharp cheddar cheese
- 2 pinches smoked paprika
- 3 strips bacon
- 1 small tomato, diced
- 3 green onions, chopped
- 1/4 cup sour cream
Instructions
- Cook the bag of frozen waffle fries according to the package instructions. This should take about 25 minutes.
- While the fries cook prepare the toppings.
- In a skillet cook the bacon over medium heat turning occasionally until it is cooked to your liking about 8 to 10 minutes. When finished cooking transfer the bacon to a paper towel lined plate to drain before chopping.
- In a small sauce pan melt the butter over medium heat. Once the butter is melted add the flour and whisk together. Slowly pour about ⅓ of the milk in and whisk to mix with the flour mixture. Once it starts to thicken slowly pour the remaining milk whisking until well mixed. Let the milk mixture continue to heat up whisking occasionally, let the milk warm up about 5 minutes once it is steaming but not simmering add the sharp cheddar cheese and smoked paprika. Let the cheese rest in the milk for 10 to 20 seconds, then slowly whisk the cheese into the milk to create a cheese sauce. Take off the heat.
- Dice the tomatoes and slice the green onions.
- Once the waffles fries are done transfer them to a platter or clean cutting board. Add the heated pulled pork on top of the fries. Layer on the toppings drizzle on the cheese, add the chopped bacon, tomato, green onion, and dollop on the sour cream. Serve and enjoy!
Notes
For a runnier sour cream you can drizzle on the fries instead of dollops just add a splash of water and mix well.
